Trying to make a nice red pesto inspired by Newtown Providores Red Pesto which sells for $40/kg. Still experimenting with the quantities, but here’s my latest effort and it’s pretty good.
MIX all the following in a food processor or with barmix till no large chunks remain, but not till smooth.
150ml canola oil
8 sundried tomatoes (I used dried ones from IGA)
1 sundried red capsicum (I used bottled ones from IGA)
a good handful of crumbled parmesan cheese (bash it or squash it till it starts to crumble so it’s not too hard for the food processor)
1 small fresh chilli
6 1/2 turns of fresh ground pepper
1/2 tsp salt
THEN add 1/2 cup cashew nuts and mix till still a bit lumpy, but no big bits.
Good as a dip for crackers, or as a pasta sauce over hot pasta.
